Eat Your Veggies!

Eating cruciferous vegetables like broccoli, Brussels sprouts, or cabbage might slow the progression of—or even prevent—osteoarthritis. In mice, sulforaphane, a compound created in these vegetables when they are eaten, blocked a key cartilage-damaging enzyme. Researchers are now investigating whether sulforaphane will do the same for humans. For two weeks before knee surgery, 20 arthritis sufferers will eat a specially bredbroccoli variety that contains high levels of glucoraphanin, the compound that becomes sulforaphane.
